Raz El Hanout Red chilli or softer yellow, ras el hanout is the curry spice mix in Morocco. This may however vary from one region to another or from one tradition to another because everyone in Morocco to his idea of the composition. Ras El Hanout effectively means the head of the shop. Generally composed for the yellow coriander, turmeric, cumin, grains of paradise, cumin, salt, rosebuds ... and the red: hot pepper, rice flour, salt, sandalwood, coriander, ... Use: fish, vegetables, merguez and tajine.
