Very different from Espelette Pepper or Japanese Togarashi, the coarsely ground Gochugaru chili like the Spanish Niora Hojila is the essential ingredient of Korean cuisine for making kimchi, fermentation of one or more vegetables. Gochu means chili and garu powder in Korean. Its spiciness is moderately strong, but locally there are very mild and very spicy depending on the maturity of the pepper.
